Paprika Chicken

Paprika Chicken


Ingredients:

  • Chicken (4-5 lbs)
  • 3 garlic cloves, crushed
  • 6 Tablespoons of yogurt
  • 3 Tablespoons of paprika
  • 2 Tablespoons of Olive Oil
  • An additional 1/4 cup of olive oil
  • Cayenne Pepper
  • 2 Tablespoons of Sherry Vinegar
  • 1 Tablespoon of ketchup
  • Salt and Pepper to taste (optional)
Directions:



  • Whisk together olive oil, garlic, yogurt, a pinch of cayenne pepper, and you guessed it the paprika in a large bowl fit for a king.
  • Add the chicken and make sure all of it is evenly coated. Do you know what I mean by coated because I know you just threw the chicken in there and tossed it about. Go back and make sure that chicken is covered! (Works better if you put the mixture in a bag)
  • Cover this glorious bowl with some plastic wrap and let it marinate in the fridge for 3 hours (Three, 03:00, 2 + 1 Hours). If you have people in the house that love good  food, put a note on the bowl that says, "Wait, this isn't my final form. Trust me, eat me later."
  • Now fast forward 2 1/2 hours so you can preheat the grill you're about to grace with the presence of your chicken. I would recommend glazing some oil on the grate because it is delicious.
  • Remove the chicken from the bowl or bag and put it on a sheet with paper towels. Remember when I told you to cover it with the mixture? Well now you're going to pat it dry and make sure you get all of that magnificent mixture off of the chicken.
  • Take that additional bit of olive oil (1/4 cup) and mix it with sherry vinegar, ketchup, some more paprika if you feel up to it, and salt and/or pepper to taste.
  • Grill the chicken for 4 minutes with the lid down. I know you want to poke around or stare at the gorgeous food you just created but put that lid down!
  • Turn the chicken over and grill again until browned or the pink center is gone. Listen man, I'm not going to be responsible if you get sick because you ate uncooked chicken. Grill it until the meat is no longer pink seriously.
  • Spoon that wonderful ketchup mixture over the cooked chicken and serve it.






*Recommendation: If you get to someone who hesitates to take a piece of this chicken, skip over them and take two pieces for yourself. Will you regret it? Not if you love life.
